Season to Harvest: Spring/Summer
Yield: 4-6 servings
1 lb ground beef
18-22 fig leaves
1/2 cup fresh edibles, chopped
We used cleavers, chocolate mint, vetch, clover, plantain & wild onion.
Chop edibles & mix into beef. Set aside.
Lay out a fig leaf, roll, tie off with cooking twine & stuff. Follow diagram below. Repeat until all leaves are stuffed.
Add 1 cup water to Instant Pot & place a steamer in it.
Place a single layer of wrapped leaves in a circle around center of steamer with the tied ends pointing to the center.
Close lid & use steam setting for 3 minutes under pressure. At the end of steam time, release the pressure valve to release pressure.
Take cooked wraps out, cut twine & set aside.
Repeat steps 4 - 6 until all wraps are cooked.
