Not Your Mom's Meatloaf

Season to harvest: Spring/Summer

Yield: 8-10 servings


2 lbs ground beef

1 small onion

1 cup carrots, grated

1/4 cup parsnip, grated

1/4 cup dried stinging nettles

2 large eggs

2 tsp maple syrup

1 TBS blackstrap molasses

Salt & pepper to taste Directions

Chop onion finely

Add all ingredients to a bowl & mix well with hands

Put into a loaf pan

Bake uncovered in preheated oven at 350°F for 1 hour

(Bread-less & free of nightshades)
